Definition of t-bone steak
T-BONE STEAK: Steak cut from the beef short loin that contains the tenderloin muscle and a T-shaped bone. It is distinguished from the Porterhouse steak by its smaller tenderloin muscle, which is not less than 1/2 inch or more than 1 1/4 inches when measured through the center of the tenderloin parallel to the backbone in the short loin.
