Definition of pathogen
PATHOGEN: Any agent capable of causing disease, usually restricted to living agents, including viruses, bacteria, fungi, yeasts, and similar organisms. Of particular interest for fresh beef products are food-borne illnesses caused by Salmonella, Clostridium, Staphylococcus, Listeria and E. coli O157:H7.
