Definition of partially defatted chopped beef (pdcp)
PARTIALLY DEFATTED CHOPPED BEEF (PDCP): Product derived from the low temperature (not to exceed 120°F) rendering of beef. Must have a pinkish color and a fresh odor and appearance. Not permitted in hamburger, ground or chopped beef, but is permitted in “Pure Beef Patties/Pattie Mix” and “Beef Patties/Patty Mix.”
