Definition of partially defatted beef fatty tissue (pdbt)
PARTIALLY DEFATTED BEEF FATTY TISSUE (PDBT): A beef by-product derived from the low temperature rendering (not exceeding 120°F) of fresh beef fatty tissue containing at least 12% lean. Such product shall have a pinkish color and a fresh odor and appearance. May be used in “Beef Patties” or “Beef Patty Mix” if identified in the ingredients statement on the label.
