Definition of map (modified atmosphere packaging)
MAP (MODIFIED ATMOSPHERE PACKAGING): Many food products – including some meat products – are packaged with a small amount of gas to maintain their fresh color and enhance shelf life. This technology uses a mixture of gases, which may include a tiny amount of carbon monoxide. Other gases used include carbon dioxide, nitrogen and oxygen. The FDA has reviewed the use of carbon monoxide in packaging a number of times since the late 1990s and, on every occasion, has agreed it can be classified as a Generally Recognized as Safe (GRAS) substance. In addition, USDA’s Food Safety and Inspection Service (FSIS) reviewed the use of carbon monoxide as a component of MAP and concluded it was effective in performing its intended purpose.
