Definition of fatty acids
FATTY ACIDS: Small organic molecules that are the building blocks of fat (an organic compound triglyceride comprised of three fatty acid molecules and a glycerol molecule). There are two types of fatty acids - saturated and unsaturated. If a particular fat deposit contains fat with a relatively large amount of saturated fatty acids, the fat will be relatively hard in nature. Conversely, if it has a large amount of unsaturated fatty acids, it will tend to be soft.
